Strawberry Chia Jam

 Have you heard of Chia seeds? These tiny little gems are healthy and so good for you.  What I love about them is they are totally versatile too.  You can use them in smoothies, baked goods and so much more.  I saw a few recipes floating around on Facebook and Pinterest using chia seeds with strawberries to make up a fresh jam.  So I knew that I had to try it out.  I made this in 5 minutes using the food processor and put the jam overnight in the fridge to set up.  What a treat!  The jam is so fresh tasting and it's not overly sweet.  Now if you like syrupy sweet jam, then adjust your sugar to taste.  This is one jam I can allow my kids to eat with a big smile on my face.  I am also going to eat this on some plain Greek yogurt... YUM!





 
 

Ingredients:
1 1/2 lbs of fresh strawberries
1/3 cup - 1/2 cup sugar **see note
4 Tbs Chia seeds
3 Tbs water
**(add sugar to taste- this depends on your the sweetness of strawberries too)






Directions:

Wash and hull strawberries.  Mix water and chia seeds together until they form a jelly like texture (this only takes a few minutes).




Add all ingredients into food processor and blend/pulse to your desired consistency.  Note: if your strawberries are extra juicy and there is more liquid in the jam, add another Tbs of chia seeds.   Place jam in airtight jar and put in fridge overnight to set.  Keeps in fridge for a week.  Can be eaten like jam or even as a fruit topping for ice cream, yogurt, etc...   Enjoy.
