Chickpea and Feta Salad

 The weather is hot and any dish I can make without turning the stove on is a plus.  This salad comes together in 5 minutes, it's healthy, colorful and my kids loved it.  I am definitely going to make loads of this salad all summer long and have it at all my picnics and barbeques.  I also think chickpeas will be a go to ingredient for me this summer. Costco has a huge (I mean huge) can of chickpeas (6lbs) for only $2.99 and it's a major bargain.    If you have been here before, you know I love a good deal/bargain.  So Keep a look out for more chickpea dishes in the future.





Ingredients:
1 (15oz) can of chickpeas (rinsed and drained well) or two cups
1 tomato diced
1/2 English cucumber (or regular cucumber seeded) diced
1/2 red onion finely diced
1/2 cup Feta cheese
1/2 Tbs minced fresh mint
1 Tbs minced fresh parsley

Dressing:
1/2 lemon juiced
1 Tbs canola oil
salt and black pepper to taste
1 tsp rice wine vinegar
1/4 tsp cumin powder

Directions:
Place all prepped ingredients in bowl.  Prepare dressing.  Mix all ingredients together with dressing and chill for 1 hour. Enjoy.
