Watermelon Lemonade

It's finally warming up around here and we have perfect weather for Cinco de Mayo today.  When it's hot, I crave a lot of refreshing and cooling beverages.  Watermelons and lemons are the perfect flavors for drinks to celebrate the warm weather.  They also compliment our Mexican feast to celebrate Cinco de Mayo. 

Watermelons are also coming into season here so grab a big seedless melon and make a batch of this Watermelon Lemonade.  Then all you have to do is kick back and cool off. 

The kids had a great time making this drink with me and when they finished juicing and mixing it all up they drank it with happy smiles.  Now if you are not interested in a kid version of this, add a splash of tequila to the drink and make it a grown up fiesta.



Ingredients:
5-6 cups cut watermelon chunks (no rind)
1 cup lemon juice
water as needed-(about 3-4 cups)
simple syrup from recipe below as needed to sweeten
ice as needed
optional ingredients:  mint

Adult version:  splash of tequila (optional)

Simple syrup:
1 cup sugar
1 cup water
Heat both ingredients and bring to a boil.  Stir until sugar is dissolved. 


Directions:
 
 Blend watermelon until smooth. Strain all pulp out of watermelon.  Mix watermelon juice with lemon juice, water and simple syrup. Adjust to taste.  Serve with ice.  Enjoy.
