Banana Oat and Chocolate Bars

A crime was almost committed in my kitchen today... my hubby almost threw out some perfectly good bananas thinking they were trash.  I can see why he thought so, they did look pretty bad.  Then I showed him how perfect they were inside.  They were blemish free and perfect for baking. So I decided I needed to bake something he would love with them (to make him feel even worse for wanting to waste them).  So I made these banana oat bars and added a lot of chocolate chips to make them extra yummy.  They came out better than even I expected.  He promised me after eating the first of many bars that he will not throw out any banana before I give the "to bake or not to bake" once over. :)

Ingredients:          
Wet:
1 egg
1/3 of a cup of applesauce
3 ripe bananas
1 tsp of vanilla
1/2 cup of brown packed brown sugar
Dry:
2 cups rolled oats (not instant)
1/2 cup of whole wheat flour
1/2 cup of all purpose flour
1/2 tsp of salt
1 tsp of baking soda
1 tsp of baking powder


Extras:
1-2 cups of chocolate chips

Note: I actually did not have enough chocolate chips, so I used leftover white chocolate and peanut butter chips from other recipes.

Tip:  I keep my chocolate in the freezer.    


Directions: 


First mix all the wet ingredients. I used an electric mixer to do this part.  Next stir your dry ingredients together well with a spoon. Fold in your wet ingredients to your dry ingredients and mix gently.


 
 I decided to put some parchment paper inside my baking dish so I could easily pull out the entire pan of bars and cut them.  Spray parchment paper with some cooking spray before pouring the batter into it.  Bake at 350 degree for 30-40 minutes.  When a knife comes out clean, your bars a done. 



 Enjoy.  Store in an airtight container.
