Spicy Cauliflower Au Gratin

When I look at the photographs for this dish I think "Ho-Hum and Boring".  I wish the photographs would give a better portrayal of what this dish tasted like.  Sometimes taking pictures of food can be so challenging for me and I realize I have so much to learn.   It's simply cauliflower in a spicy cheese sauce covered with some jazzed up cracker crumbs and baked until bubbly... but the photograph looks so flat and so dull to me that I have been holding back from posting it. I finally decided the recipe was worth posting even if my glamor shots are less than appealing.  So excuse the photo, but if you ever find yourself with a cauliflower and don't know what to do with it try this recipe's pretty darn good. :)

I large head of cauliflower broken into florets
1 cup of cheddar cheese
1 clove of garlic minced well or grated
red chili flakes to taste
1 tsp of cumin powder
1 cup of milk or half and half
1 Tbs of butter and 1 Tbs of canola oil
2 Tbs of all purpose flour
salt and pepper to taste
Cracker Topping:
10 butter crackers crushed (I used Ritz)
2 Tbs of Parmesan cheese
1/4 tsp of garlic powder
1 Tbs of dried parsley

In a large pan heat your butter and oil on medium-high heat.  Add your garlic, chili flakes and cumin powder. Then add your flour. Stir well.

Next add milk, cheddar cheese and salt and pepper. Stir until well melted. Lower heat to medium low and add  cauliflower.  Cook cauliflower until almost fork tender.
 Put all ingredients into a baking dish and top with cracker topping. Bake in a 350 degree oven for 20-25 minutes.  Serve hot.  Enjoy.
