Pork Kebabs with Yogurt Mint Sauce


 I made these pork kebabs for dinner and they were a big hit.  The recipe could not be simpler because I let the marinade do all the work.  I actually allowed these to marinate in the fridge for 36 hours and not the typical overnight or 24 hours that I usually do.  The flavor really got into the meat and it tasted like something from a kebab restaurant.  I served it with some yogurt mint sauce and we ate it with salad and some pita bread.  Here's another make my own take out dish that makes me want to cross off going out for a kebab meal in the future.

2lb of lean pork loin cubed in 1 inch cubes

1/4 cup up to 1/3 cup of soy sauce
1/3 cup up to 1/2 cup plain yogurt
1 Tbs of Garam Masala Powder
2 Tbs of grated ginger/garlic paste or 1 of each separately
1-2 Tbs of honey
black pepper to taste

Mix the marinade and toss with pork. Allow pork to marinate for 24-36 hours in the fridge.  Skewer meat onto wooden skewers.   Heat a griddle or grill pan with some canola oil.  Grill skewers on all sides until browned, caramelized and the meat is cooked through.  Serve with yogurt mint sauce, salad and pita bread. Enjoy.

Yogurt Mint sauce:
1 cup plain yogurt
1 small handful of minted chopped
1/2 tsp of ground cumin
juice of half a lime or full lime if it's not too juicy
salt to taste
Stir well and allow to chill for a few minutes before serving.
