Brownie Pizza (Throwback Thursdays)

 I'm always trying to get my kids to eat more fruit.  Well, this dessert is a fun way to get them to do so.  I just piled all the fruit on top of a brownie and call it a brownie pizza.  A thin layer of brownie and a pile of fresh fruit with a tangy cream filling is sure to put a smile on your face.

Note:  Throwback Thursday is a new series where I take some of my original posts here on  Curry and Comfort and redo them so I can take better photos.



Ingredients:
1 box of Brownie Mix
1 (8oz) package of cream cheese at room temperature
Fresh fruit of your choice (ie..strawberries, bananas, kiwi etc..)
1/3 cup sugar (or splenda)
1/2 tub of cool whip
Sundae toppings like chocolate syrup, nuts, mini-marshmallows (all optional)



Make brownie mix according to package directions.  It's best if you can bake in a deep dish pizza pan (with an edge).  I actually decided to used two round 8'' cake pans and made two mini brownie pizzas.  If you decide to use the cake pans my baking time was 20-22 at 350 degrees.


Mix the room temperature cream cheese with 1/3 cup sugar or splenda.  I also added half a tub of cool whip because I wanted a lighter filling.


 Cut your desired fresh fruit.  Here is a tip to get uniformed slices on soft fruit... an egg slicer. : )




Once the brownie is baked, cool completely.  Then invert onto a cake plate and top with cream cheese filling.  Then top with any fruit and/or sundae topping.  Slice into pizza slices and serve.  Enjoy.
