My favorite chocolate candy is a Reese's Peanut Butter Cup. Lucky for me, my family also loves peanut butter cups so they are always excited when I find a new way to include it in a dessert. They loved the last dessert shot trifles I made so much that I made these into mini trifles as well. It's a perfect little hit of dessert after a meal to quench that sweet treat craving.
Ingredients:
2 bricks (8oz) soften cream cheese
2/3 cup up to 1 cup of sugar ** (or splenda for low carb)
1 tub whipped topping
2/3 cup (up to 1 cup) creamy peanut butter
2 Tbs chocolate syrup (more for garnish)
1 cup crushed graham crackers
1 Tbs melted butter
1/3 cup chopped Reese's Peanut Butter Cups
Note: Add sugar to taste. I like things less sweet, but so I only add 2/3 cup.
Directions:
Blend softened cream cheese, sugar, peanut butter and chocolate syrup using an electric mixture until
smooth. Then fold in the whipped topping. In a separate bowl mix
graham cracker crumbs with melted butter and set aside. To assemble the
mini trifles fill cheesecake filling into a pastry bag or zip-top bag
so you can easily fill the glasses.
To fill start with graham cracker mixture at the
bottom. Then pipe some cheesecake mixture. Next add chopped Reese's Peanut butter cups and follow with more cheesecake filling. Sprinkle a dusting of graham
crackers and more chocolate syrup on top to garnish. Chill and serve. Makes about a 10-12 mini
trifles depending on the size of your glasses and how much you fill
them) Enjoy.
