Mango No-Bake Cheesecake

Mango is one of my favorite fruits.  I made this quick no-bake cheesecake with fresh mango for a family party and everyone enjoyed it.  This sunny looking dessert not only tastes good, but makes you feel less guilty enjoying dessert when it's giving you a serving of fresh fruit.

1 pre-made graham cracker crust
1 brick cream cheese at room temperature (full fat or reduced fat)
1/2 tub of cool whip
1/2 cup of sugar
1-2 mangos

Using an electric mixer, cream the sugar and cream cheese.  Then fold in your cool whip topping.

Fold in 1 cup of diced fresh mango.

Pour filling into a pre-made pie crust. Top with more diced mango as a garnish.   Chill overnight.
