Gluten-Free Almond Crust Cheesecake from Gluten-Free Made Easy


My blogging friend, Christi Silbaugh, accomplished something amazing recently.  She co-wrote a cookbook called Gluten-Free Made Easy and it's absolutely wonderful.  The book is a fantastic collection of recipes and information for anyone looking to cut out gluten in their diet.  I am eating low-carb these days so this is a wonderful stepping stone to help me in my new eating lifestyle.  Today I bring you the fabulous and delicious Gluten Free Almond Crust Cheesecake recipe.  This is such an easy cheesecake recipe to make.  Since I am trying to avoid sugar, the only changes I made to the recipe was swapping out the sugar for a sugar-alternative.  I love the idea of the almond crust and being able to eat such a luscious dessert and not feel bad about it.   Thank you Christi and Michele for your amazing book!

Making the almond crust... so easy!  Just put it in the oven while you whip up the filling.
The filling. Remember to use soften cream cheese (leave it out on the counter for at least 30 minutes to 1 hour) I used an 8 inch springform pan.

 All baked and ready to be topped with fresh fruit or your favorite cheesecake topping.  This was so much easier than I thought.  The hardest part was chilling it before serving because I was so excited I wanted to eat it right away. I recommend you make this the day before you want to eat it... so it's a perfect do ahead dessert for a dinner party.
