Sometimes
I'm just a kid at heart. If you put a chocolate chip cookie in front
of me while I'm having a rough day, it could actually make me feel better. I always have the fixings for
chocolate chips cookies in my house, but baking an entire batch takes
time and sometimes I need a chocolate chip cookie fast (especially on really rough days!). That's
why I love mug cakes and desserts. If you have a craving for a little
sweet treat, you can make a miniature dessert just for one or two people
and not have to go to the expense or work of making an entire cake. Even worse is you will end up eating up all that extra cake or dessert when all you wanted was a little treat one time. So mug desserts totally rock in my world.
My
nephew made chocolate chips cookies in a mug at school and he knew he had to share it with my kids and the blog. So today in Kids in the Kitchen I am sharing the recipe that he used to make these fabulous cookies
in a mug.
Ingredients:
1 Tbs butter
1 Tbs granulated white sugar
1 Tbs firmly packed brown sugar
1/2 tsp vanilla extract
small pinch of salt
1 egg yolk (save the egg white for a different recipe)
Scant1/4 cup all purpose flour (slightly less than 1/4 cup)
2 heaping Tbs of semi-sweet chocolate chips
Directions:
1. Start by melting your butter in the microwave. Butter should be melted but not boiling.
2. Add sugars, vanilla and salt. Stir to combine.
3. Add flour and egg yolk, then stir again.
4. Finally add chocolate chips and cook in the microwave on high for 1 minute. If needed add 10-15 seconds additional time until your cookie is cooked through.
