Mince Beef and Asparagus Stir fry is a wonderful way to use up some of the asparagus that is in bounty at this time of the year.
Spring is finally here, but mother nature did not get the message. We are still having some winter weather and that's just not fair! Fortunately, the grocery stores are still stocked up with all the great produce of spring, like asparagus, and that gives me some consolation until the weather officially warms up.
I used minced ground beef in this stir fry because I really dislike cutting meat. It's also such a quick way to make a stir fry because there is no chopping or cutting board needed... just brown and add all the veggies and seasoning. This was a quick meal for my family served with rice.
Mince Beef and Asparagus Stir Fry

Ingredients:
1 1/2 pounds lean ground beef (93% fat free)
1 pound asparagus chopped (stems removed)
1 large onion sliced
1 large bell pepper or several sweet pepper sliced
2-3 cloves garlic grated
1 Tbs grated fresh ginger
3-4 Tbs soy sauce (or to taste)
2 Tbs Chinese rice wine (shaoxing) or dry sherry
2 Tbs hoisin sauce
1-2 Tbs sambal oelek
salt and black pepper to taste
1/3 cup water
1 Tbs cornstarch mixed with 1 Tbs water
1 tsp toasted sesame oil
Directions:
Brown ground beef well. Season with some salt and black pepper. Then add sliced onions, grated ginger and garlic and stir fry for 1-2 minutes. Add cleaned asparagus to pan and stir fry. Remember to cut off woody stem part of asparagus first.
Then add soy sauce, hoisin sauce, Chinese rice wine or sherry and sambal oelek. Next add the pepper sand saute for a minute.
Add the water and cook for 2 minutes. Then make cornstarch and water slurry and add to pan. Cook for 3 minutes. Add toasted sesame oil then taste for salt and seasoning, adjust as needed. Serve over rice. Enjoy.
