Biscuit Crust Taco Pizza

 My kids were having a play date with their cousins and they wanted pizza for lunch.  I looked around my kitchen and fridge for a quick pizza crust when I saw the Pillsbury Grands Biscuits sitting there.   I divided each biscuit into two (they easily pull apart since they are layered) and got to work pressing the biscuits together to form a pizza crust.  Just add pizza topping of choice and cheese... bake and you've got a fun, flaky pizza crust in minutes. I decided to do a Taco pizza and made a quick guacamole to eat it with as well.



Ingredients:
1lb lean ground meat (beef, chicken, pork or turkey)
2 jalapenos seeded and chopped
1 onion chopped
2-3 Tbs store bought Taco seasoning (I used McCormick brand)
1-2 tsp of ground cumin
1 tsp of garlic powder
1 tsp of red chili flakes (or to taste)
Salt and Pepper to taste
1 (15oz) can diced tomatoes
1 tube of 8 grands biscuits
2 cups shredded cheddar or Mexican blend cheese


Directions:
Start by browning meat with a little salt and pepper. Then add onions and jalapeno and finish browning meat.  Next add seasoning: taco seasoning, cumin, garlic powder, red chili flakes. Saute for 1-2 minutes.



Then add one can of diced tomatoes.  Saute for another 3-5 minutes.  Taste for seasoning.








To assemble pizza:
Divide biscuits into half and join together by pressing the edges.  Top with taco topping and cheese. Bake in a 400 degree oven for 20-25 minutes until biscuit is baked and cheese melted.  Enjoy.
