Cranberry- White Chocolate Banana Bread

We eat a lot of banana bread around our house because I always try to use up ripe bananas before they get wasted. So I have to come up with new ways to make it otherwise plain banana bread would become boring and my family would not want it either. I don't think the bananas deserve to be rejected twice.  Everyone really loved this combination of white chocolate and cranberries.  The white chocolate melted a bit and made this banana bread so moist and flavorful. I may have to buy more bananas just so they can get ripe to make this version again soon.



Ingredients:
1 cup all purpose flour
1 cup whole wheat flour
1 tsp of baking soda
1/2 tsp of salt
1/4 cup of canola oil
1/2 cup of honey
1 tsp vanilla
1tsp of lemon juice
2 eggs
3-4 ripe bananas mashed
1 cup of white chocolate chips
1 cup of dried cranberries

Directions:

Mix the wet ingredients together (eggs, honey, lemon juice, vanilla, mashed bananas and oil). Then add the dry ingredients (flour, baking soda and salt).  Add the chocolate and cranberries and mix the wet and dry ingredients together.  Do not over mix.
Pour batter into a well greased loaf pan and put into a 350 degree oven for 45-55 minutes or until done.  Slice and serve. Enjoy.
