Tex-Mex 5 Layer Dip - Happy Cinco de Mayo

Yum

I few days back I talked about how "double dipping" dips is totally gross. I took that to heart when I decided to make a Tex-Mex Layer dip for Cinco de Mayo.  I made these individual little beauties and everyone had their own bowl to enjoy.  You have a layer of spicy re-fried beans, guacamole, sour cream, salsa and cheese.   That adds up to 5 layers for the 5th of May. :)  Have a wonderful and delicious Cinco de Mayo!

Ingredients:

Re-fried Bean Layer:
1 can vegetarian re-fried beans
red chili flakes to taste
1/4 tsp garlic powder
1/2 Tbs cumin powder
2 Tbs water

Guacamole Layer:
1 ripe avacodo
lime juice to taste
salt to taste
2 Tbs sour cream

Sour Cream
favorite sour cream of choice

Salsa of Choice
favorite salsa of choice

Shredded Cheese of choice
I recommend a Mexican cheese blend

Garnish:
pickled jalapenos

Directions:
In a pan heat re-fried and ingredients listed with the beans.  Allow to cool to room temperature.  Then mix guacamole mix.  Layer in the bowls starting with the beans mixture first.  The follow with guacamole, salsa, sour cream and cheese.  Makes about 4-6 servings. Enjoy.
