Salad Sub Sandwich for Submarine Sandwich/Hoagie Day

It's Submarine Sandwich/Hoagie Day today and I have a light and healthy sub perfect to celebrate the day.  My fridge is always stocked up with salad fixings so I can make eating healthy foods a top priority.   As much as I love salads, it's nice to play around with it sometimes and that's what I did with this salad sandwich.   It was so easy to put together and the dressing is what really makes this sandwich special.  No need to go to a sub shop for this veggie delight... just open up your fridge and throw together this tasty salad sandwich in a jiffy and enjoy.




Salad Sub Sandwich

Ingredients
For Subs:
  • Romaine Lettuce (as needed)
  • Sliced Tomatoes (as needed)
  • Sliced English Cucumbers (as needed)
  • Sliced Green Peppers (as needed)
  • Submarine Sub Rolls (toasted optional)
Dressing for Subs
  • 4oz Chive and Onion Cream Cheese
  • 2 heaping Tbs of mayonnaise
  • 2 heaping Tbs of sour cream
  • small pinch of sugar
  • 2-3 tsp cider vinegar
  • salt and black pepper to taste
Instructions
1. Make dressing and place in fridge to chill for 20-30 minutes.
2. To make subs, clean and slice your desired veggies. Then salt and pepper vegetables lightly.
3. Toast bread if you desire.
4. To assemble the sub, apply some dressing on either side of bread and layer the salad ingredients. Top with some more dressing if desired. Enjoy.

Step by Step Directions:
Make dressing and place in fridge to chill for 20-30 minutes.
