Happy St. Patrick's Day Everyone!!
This past week I shared some St. Patrick's Day inspired dishes and I couldn't let the actual day go by without one more dish to enjoy. I made this over the weekend to celebrate the holiday at a party. These little brownie cupcakes had a mint Oreo cookie inside as a surprise. If you love mint chocolate chip ice cream or peppermint patties chocolates... you will love this chocolate and mint combination. Now I made a mint cream cheese frosting for the top, but you can totally serve this without frosting. My son preferred them without frosting... my husband loved with the frosting. I love how festive they turned out and will definitely make them again next year.
Ingredients:
2 box of your favorite brownie mix
1 package Cool Mint Oreo Cookies (about 30 cookies)
Frosting
1 (8oz) brick cream cheese softened
1 stick butter softened
1/4 tsp mint extract (or to taste)
green food coloring about 2-3 drops
1 cup powdered sugar
Directions:
Mix brownie batter per package instructions. Spray cupcake pans with nonstick cooking spray. Fill batter half way in each cupcake slot. Then place an Oreo cookie in each one and top off with a little more batter to cover the cookie.
Save a few cookies and crumble for later.
Bake at 350 degrees for 18-20 minutes. Allow cupcakes to cool fully before frosting.
Use an electric mixer to whip all frosting ingredients together. Frost cupcakes once cooled. Then garnish with crumbled cookie pieces. Keep chilled until you serve. Enjoy.
