Chicken Tikka Salad #‎BloggerCLUE


It is Blogger C.L.U.E. time again and the theme this month was spring dishes.  I was assigned Azmina from Lawyer Loves Lunch.  I was first introduced to Azmina and her blog through our Blogger C.L.U.E. group.  It has been fun getting to know her better and I have enjoyed reading all her posts in the last few months.   

Her blog is cleverly written and full of humor.  I never know what she's going to say and her little stories always make me smile.  Once, she sheepishly admitted to being so busy and rushed in the morning that she ate her son's fruit snacks for breakfast. I had a good chuckle at that anecdote. I think as a mom we all been in that crazy frazzled moment.  At least she ate an organic fruit snack so she gets extra credit.  Her blog is full of funny moments and stories so it's a good read for sure. 

She states that when she was little, while most girls her age were dreaming about being ballerinas, she was dreaming about being a lawyer and defending the civil rights of others.  She definitely accomplished her goal and made her parents very proud.

Azmina admits that working as a lawyer in the real world is not as posh as the TV law shows portray.  It's a lot of hard work, a lot of reading detailed legal documents, and running to court.  Her law career is very demanding and she was spending far too much time at work.  She works 60 hour weeks and that's not including the time she spends thinking about case law in the shower!  Now, that's what I call being dedicated to your job.  LOL!  

So a few years ago, Azmina realized she did not want end up like her lawyer colleagues eating their bland microwave lunches.   Azmina loves to eat good food so cooking and blogging became a natural outlet for her.  I also love that her "hubster", husband, gets in on the action.  He helps her out with the blog photography, tech support, and as her chief taste tester.

I enjoyed looking through her recipes and this Chicken Tikka Salad had my full attention from the first moment I saw it.  First of all, it's full of spices and I LOVE SPICES!  Second, it's light, fresh and low-carb.  These days eating a low-carb hearty salad is my favorite way to eat.  I loved this salad so much and I actually ate this huge plateful in one sitting (without any guilt too).  I was rubbing my belly with happy satisfaction and saying "Thank You" to Azmina for her recipe.   This spring, you must make this salad for yourself.  Now if you want to read a clever blog, please head on over to Azmina's blog and check out Lawyer Loves Lunch!

Bag of Salad Green
Slices of cucumber
chunks and fresh tomatoes

For the Chicken Tikka:
2 large boneless and skinless chicken breast
1 1/2 tsp ground cumin
1 1/2 tsp ground coriander
1 1/2 tsp garlic powder
1 1/2 tsp paprika
1/4 tsp turmeric
1/4 tsp garam masala
2-3 Tbs (heaping tablespoons) plain yogurt
Salt and Black Pepper


First cut chicken into cubes.  Then add yogurt with all the spices and mix well. Add the chicken and to the yogurt/spice mixture and marinate in fridge for a few hours if possible to absorb flavors.  If not, just marinate for 30 minutes. 

To cook the chicken tikka, heat 2 tablespoons of oil in a pan (I used a nonstick pan). Cook chicken. Alternatively, you can thread the chicken onto wooden skewers (**Remember to soak the skewers for 30 minutes in cold water first) and broil until cooked.

Lime Yogurt Dressing

3 tablespoons plain yogurt
1/2 teaspoon whole cumin seeds
1/2 teaspoon lime juice
Salt and pepper

Mix all ingredients together.  If you like a thinner dressing, add a splash of water to thin out.
