Spring Vegetable Fried Rice


It is finally starting to feel like spring where I live.  I love this time of year because asparagus is in season and I adore it.  So, when I was invited to join in the Country Crock's recipe contest, I decided to use a bunch of asparagus to make a spring vegetable fried rice.

I make a lot of fried rice at home because we always have leftover rice hanging around.  Did you know that leftover rice is actually better to use for fried rice than freshly cooked rice?  I love throwing what ever vegetables I have in my fridge to make a quick fried rice for my husband and kids to eat for lunch or dinner.  

I served this rice as a side dish with some chicken curry and salad.  But it makes a wonderful main dish if you simply add some protein to this dish.  You can add some shredded rotisserie chicken or simply scramble a few eggs in some Country Crock and toss with the rice.

4-5 cups cooked cooled brown or white rice (or leftover rice)
1/4 cup (4-5 Tbs) of Country Crock Buttery Spread
1 tsp fresh grated ginger
red chili flakes to taste
1 medium onion finely chopped
1 red bell pepper finely chopped
1 bunch asparagus cut into small pieces
1 cup shredded or matchstick carrots
1 cup frozen peas
1/4 cup soy sauce (or gluten free substitute)
1 tsp granulated garlic
1/2 tsp up to 1 tsp sesame oil (to taste)

1 Cup shredded rotisserie chicken 
2-3 scrambled eggs

1.  Cook rice and cool down (or use leftover rice). 

2.  Wash all vegetables and chop them.  **Remember to remove woody stems of asparagus by snapping the asparagus by holding the top and bottom.  The woody stems will break off then.

3.  Melt Country Crock in large saute pan or wok (I like nonstick).  
4.  Then add grated ginger and red chili flakes.

5.  Next add chopped onion, asparagus and matchstick carrots. Season lightly with salt.
6.  Next add chopped bell pepper.

7.  Add soy sauce (or your preferred dietary substitute) and granulated garlic.

8.  Add cooked rice and frozen peas and combine all ingredients together. 

9.  Finally add sesame oil and stir ingredients gently.  Taste for seasoning and serve hot.  Enjoy.
