Oven Baked Baja Fish Tacos with Creamy Chipotle Sauce

Ingredients for Fish:
1lb of firm white fish like Cod (cut into large cubes)

Grape tomatoes
Bell Peppers or sweet peppers


Marinade for fish:
1/4 cup of canola oil
juice of 1 lime
Salt and Pepper to taste
1 tsp cumin powder
2 cloves garlic
2-3 chipotle peppers for spicy version (1 for milder version)


Directions:  Put all ingredients (accept for the fish) in a food processor and puree until smooth.  Pour marinade over fish and allow to marinate for about 20 minutes in the fridge.


Slice grape tomatoes and sweet peppers and put them at the bottom of a baking dish.   Then topped it with the marinated fish. Pour any excess marinade over fish.  Bake at 450 degrees for 20 minutes or until fish is cooked and flaky.

 
To assemble the taco-  Heat tortillas in the microwave, oven or over a griddle.  Put some of the broiled peppers, tomatoes and fish.  Then add the Chipotle sauce and some shredded lettuce or shredded cabbage (traditional) for crunch.  Enjoy.


To make the Chipotle Cream Sauce:

1/2 cup of Greek Yogurt (or strained regular yogurt)
1-2 chipotle peppers (pureed or smashed)
2 Tbs of good quality mayonnaise
salt and pepper to taste
pinch of sugar
small squeeze of lime juice
