Spicy Grilled Cheese

Grilled Cheese sandwiches are a favorite for everyone in my family on sandwich nights.  Although the classic grilled cheese is always good, I like to spice my cheese up with some chilies.  This is a very flavorful sandwich that comes together in minutes.  This sandwich makes a perfect quick meal or as part of a bigger meal with a bowl of soup.

Ingredients:
1 cup of American Cheddar Cheese (See Note)
2 Tbs of butter or margarine
2-3 green chilies seeded and finely diced (See Note)
 salt and pepper to taste
Bread (white, whole wheat, etc...)

Notes:  You can use shredded Cheddar cheese or Slices of American Cheddar cheese.You can use any kind of chili you like. I recommend jalapeno, serrano or larger green chilies.  You will want to make sure you don't pick a very spicy pepper and you clean the seeds and membrane out so it tones down the spice level. 

Mash all the ingredients together to form a paste (as much as possible).  It's okay if it's not fully mashed, it will all melt the same in the end.  Apply a good layer of the cheese/chili mixture on a slice of bread. 





Top with a slice of bread that has been butter on the outside.  Grill in a frying pan (non-stick is best) until the cheese starts to melt and the bread is golden brown.  Flip over and grill the other side of the bread that is buttered.


Makes about 4 sandwiches.  Enjoy with sandwich accompaniments and/or soup.
