Ugly Brownies

I had such success with my zucchini chocolate cake that decided I must try making brownies with zucchini as well.   Well, the zucchini brownies tasted great (chocolate makes anything good), but they looked less than pretty.  My husband coined the name Ugly Brownies because he kept eating them and saying how ugly they looked with bits of green zucchini running through them.  Okay, sometimes you have to sacrifice "pretty" for healthy... right?

Ingredients:

Wet:
1 cup applesauce
2 tsp vanilla extract
2 cups shredded raw zucchini (see note)
3 large eggs

Dry:
1 cup all purpose flour
1 cup whole wheat flour
1 and 1/2 cups sugar (or baking splenda)
1/2 cup of unsweetened coco powder
1 tsp salt
1 tsp baking powder


Garnishing:
2cups Chocolate Chips
1 cup walnuts (optional)

 Notes: You may try to avoid the "ugly" factor of these brownies by peeling the skin and then shredding the zucchini very fine.




Directions:
Make the dry ingredients mixture first.  Then make the wet ingredient mixture.  Now combine both the dry and wet together with one cup of chocolate chips and nuts.  The batter will be thick.   Pour batter into a 9x13 baking pan that is well greased or sprayed with cooking spray.  Scatter 1 more cup of chocolate chips over the top of brownie batter. Bake in a 350 degree oven for 30 minutes or until knife comes out clean from center.

Spread the melted chocolate chips on the top of the brownies (using a the back of a spoon) to make a light chocolate glaze over the brownies.  Allow the brownies to cool at room temperature for 30-45 minutes before cutting.   Enjoy.
