Korean Style Beef Bowl

I saw a photo in a magazine for a Korean Beef Bowl recently. There was beef, steamed spinach and a fried egg on top.  It looked so good that I had to try to make something similar at home.   I took a mental note of the photo and did my best to replicate it with my own ingredients.  I'm sure this is far for a real authentic Korean Beef Bowl... but it sure tasted delicious.




Ingredients:
1lb lean beef cut into strips seasoned with some salt and black pepper
1 Tbs grated fresh ginger
2-3 cloves garlic minced or grated
1 yellow onion chopped
8oz sliced button mushrooms
2 large handfuls of greens of choice (I used a mix of baby spinach, kale and swiss chard)
1 red bell pepper sliced or 3-4 sweet peppers sliced
1 Tbs soy sauce (or to taste)
1 tsp rice vinegar
1-2 Tbs sambal oelek
1/2 tsp sugar


Directions:
Heat 1 Tbs canola oil in wok and get it hot.  Then a beef with a little salt and black pepper and brown 2-3.  Next add ginger and garlic and saute for another 1-2 minutes.  Remove beef from pan and add 1 more Tbs of canola oil to the pan (if needed) and brown mushrooms.  Brown well for 4-5 minutes. 
Then add the onions and peppers to pan with mushrooms. Saute for 2-3 minutes.  Ten add the beef back to the pan and Season with sambal oelek, rice vinegar, soy sauce and sugar. 



Finally add the greens and saute until slightly wilted.  Serve with rice and a fried egg. Enjoy.
