I was assigned Kim from Liv Life. Kim resides near the beach in San Diego and boy am I envious of her warm and beautiful weather while I freeze out here on the East Coast. She is a great photographer and I simply adore her sunset and beach photos. I also adore her two adorable little dogs that love to run on the beach. She posts the cutest photos of them on her Facebook fan page.
I had a lot of fun looking through Kim's blog for the challenge. I found so many great dishes to fit the theme, so I kept changing my mind on what to pick. I stopped looking when I came across these amazing Dark Chocolate Pomegranate Bark treats. They looked simply perfect for the challenge.
Pomegranate seeds are obviously red so that made it perfect. Then I realized that pomegranate seeds and dark chocolate are full of antioxidants making them great for a heart healthy diet so that made them even more perfect. Finally these treats are totally awesome with a glass of champagne to toast the Oscars. Score!! I'm totally patting myself on the back right now, ha! ha!
Beyond fitting the theme perfectly, this Dark Chocolate Pomegranate Bark was amazing. I love the tart little pop the pomegranate seeds gives against the sweet and bitter chocolate. It is totally addictive and I almost didn't want to share it with the family. But I couldn't do that so I shared... and they ate it all! Good thing this bark is so easy to make. :) Note to myself... make a double batch next time and keep one for myself.

Ingredients:
Dark Chocolate melted
Fresh Pomegranate Seeds
Sea Salt (optional)
Note: Kim did not give exact quantities, so you can make as much or little of this bark as you want. I melted a 12 oz bag of dark chocolate chips and use about a 1/2 cup of fresh pomegranate seeds. I did forget the sea salt (oops!), but it still worked out great.
Directions:
1. Melt chocolate over a double boiler or in the microwave.
2. Mix a handful of pomegranate seeds into the chocolate and combine.
3. Spread chocolate and pomegranate mixture onto a baking sheet lined with parchment paper or a silpat baking mat in a thin layer.
4. Sprinkle some more fresh pomegranate seeds on top. Sprinkle with sea salt. Note: push down the seeds into the chocolate or they will fall out of the bark when you break it.
5. Allow the chocolate to cool down and set. Once fully hardened, carefully break into pieces and serve.

I have to admit that I made a batch of these for an event we were going to, but for some reason we had to cancel at the last minute. It took me about 36 hours to finish the entire batch by myself!! Champagne... red wine... you're Oscar party is set!
