Red Velvet Hearts on a Cloud

It's Day 2 of Valentine's Week.  I think red velvet cake = Valentine's Day.  It's red, sweet and delicious,  so it fits the theme pretty perfectly.   

I love traditional red velvet cake with cream cheese frosting, but this time around I decided to make something a little more fun and romantic with these ingredients.  I baked mini heart shaped red velvet cakes (you can bake a scratch cake or totally use a box cake mix) and placed them on a sweet cloud of cream cheese and strawberry topping.  

The red velvet hearts really get to stand out on the dessert plate and they don't get drowned under frosting.  I loved being able to just sink my fork into the cake and get some of the cream cheese "cloud" topping with each bite.   Add some fresh strawberries for extra dipping and you really got a Valentine's Day keeper!  


Ingredients:

Ingredients for Cloud:
1 (8oz) brick softened plain cream cheese 
1/2 cup strawberry jam
2 Tbs milk
1 tub COOL whip topping

For Cake:
Bake 1 box of Red Velvet cake mix prepared per box directions or follow the link for a scratch Red Velvet Cake from Wilton: HERE

Directions:
Bake cake/cupcakes according to the directions from either the box of Red Velvet cake mix or your favorite scratch Red Velvet cake in a heart shaped baking pan.  






Tip: 
If you do not have a heart shaped baking pan you can bake them in a cupcake pan with cupcake liners.  Just fill each liner half way with cake batter.  Then place a marble on the outside of liner  at the top to form the heart indentation  (do not put marble into cake batter!)  Bake as directed by cake instructions. 


  Directions for Cloud: To make the cloud. Whip together the strawberry jam, milk and softened cream cheese.  Then fold in Cool Whip Topping. 

Assemble Dessert: Place some Cloud on each dish and top with a heart shaped cake.  Enjoy.
