Happy Sunday Everyone!
Spring weather finally hit town and it is wonderful. I love going for walks and seeing all the flowers blossoming. It is so colorful outside with all the spring flowers and trees in everyone's garden.
I have always said that spring and autumn are my favorite times of the year because it has the mildest weather and the most beauty. I love to see all the colors outside like it's a painted canvas. Spring flowers and autumn trees are definitely what I call the best of nature's paint brush.
This week was all about curry and Sri Lankan food. We celebrated Sinhala and Tamil New Year and with that comes some delicious traditional Sri Lankan food.
I also had a great week of vegetarian/vegan curry dishes. I never realized how easy it would be to go totally vegan by eating vegetable curries. We use coconut milk and no animal products in the vegetable curries so it's totally doable.
Now I did end the week with an easy mild Chicken Curry 101. My two men in the house can't go many days without some kind of meat. They would not do well as vegetarians so I have to definitely bring the "beef" sometimes. This chicken curry is very basic and great for those just tipping their toe into eating curry.
