Pizza is my answer on those days because it's always welcome by my family and you can basically make pizza with what you have on hand.
I always have shredded cheese in my fridge or freezer (yes you can freeze cheese). I also always have some kind of lean ground meat in my freezer so it's there to make a quick pasta or pizza. Taco pizza became the theme of our pizza tonight after I saw the jalapenos and jarred salsa in the fridge.
I also like to have Mediterranean flat bread or naan in the fridge so I can make a quick and easy pizza crust. The flat bread just needs enough time to toast and the cheese needs to melt before you can slice and serve this pizza. I also prefer flat breads for pizza crust because I am not a big fan of a thick crust and my kids always leave the crust (edge) without eating it. They will eat every bite of this kind of pizza crust. Plus I feel less guilty eating a very thin flat bread crust pizza since it's lower in carbs.
Now my daughter is not always a fan of meat, so I just did salsa, cheese and jalapenos for her pizza. That's also why I like to use smaller pizza bases so everyone gets what they want on their pizza and I can just bake them and not hear anyone complaining about a topping they don't like.
Dinner done. Dishes done. Blog post done. The kids are in bed and it's time for Mommy to rest and watch Scandal tonight.Yippy!
Ingredients:
1lb lean ground beef, chicken or pork
1 tsp ground cumin
1-2 Tbs chili powder (used in cooking Mexican dishes)
1 tsp garlic powder
salt and black pepper to taste
red chili flakes to taste
salsa from a jar (your favorite brand)
1 small onion medium chopped
Shredded cheddar or Mexican blend cheese
sliced jalapenos
shredded lettuce (for garnish)
Store bought pizza crust or naan, Afghan flat bread, Middle Easter flat bread etc...
Directions:
Brown ground meat well and season with some salt and black pepper. Then add cumin, chili powder, garlic powder and chili flakes and cook with browned meat. Take crust and apply a light layer of salsa.
Next add meat mixture and the diced onions. Top with cheese and sliced jalapenos. Bake until cheese is melted and crust is turning crispy. Slice and serve. Enjoy.
