Oven Baked Parmesan Cheese Chicken Nuggets

These oven baked homemade chicken nuggets coated in a cheesy Parmesan cheese and panko breadcrumb coating make a great meal that kids and adults will all dig into happily. 

My kids love homemade chicken nuggets... they are simply made with real chicken and not anything processed.  I love that they are oven baked and much more figure friendly than the deep fried chicken nuggets. 

I started the process the night before by simply marinating the chicken in buttermilk and spices to really make each nugget moist and tender. 

Then it only took me a few minutes to coat each nugget in the Parmesan cheese and breadcrumb coating.  I used panko breadcrumbs because they provide a really nice crunchy texture.   Then just bake and put out some marinara sauce for dipping. It's easy as 1,2,3.  These chicken nuggets are almost as fast as the drive thru, but so much better for you!




Oven Baked Parmesan Cheese Chicken Nuggets

Ingredients:
3 pounds of chicken tenders

Marinate:
2 cups buttermilk
1 Tbs paprika 
1tsp granulated garlic
salt and black pepper

Parmesan Cheese and Bread Coating:
2 cups Panko breadcrumbs
2 cups Parmesan Cheese

1 Tbs dried parsley flakes (optional)



Directions:
Cut chicken tenders into large chunks to form nuggets.  Then marinate nuggets in buttermilk, paprika,  salt and black pepper for 24 hours in the fridge. 


Mix all ingredients for breading. Take chunks of marinated chicken one at a time and coat with breading. 
Spray a baking sheet with cooking spray.  Lay coated nuggets on tray and spray the tops of the coated nuggets with more cooking spray.  Bake in a 400 degree oven for 20-25 minutes, flipping over halfway through baking.   Serve hot with warmed marinara sauce.
