Tea Sandwich Series: Asparagus Rolls

Here is the 4th sandwich in my Tea Sandwich Series:  Asparagus Rolls.   I really love these cute little rolls of bread and asparagus with a buttery cheese spread.

Ingredients:
1 jar or can of asparagus  (see note)
4 slices of American Cheese
2-3 Tbs of butter or margarine
1Tbs of mayonnaise (optional)
salt and pepper to taste (see note)
slices of thin white bread

Directions:
Smash the cheese, butter, mayo, salt and pepper into a smooth paste. 

Note:  add the salt after you mix all the ingredients together because the cheese will have salt.

Note:  You can use fresh steamed asparagus if you like. But I think the jar asparagus has a soft and tender texture that is perfect for these very dainty little sandwiches.

Cut the asparagus to the length of the bread.




Stack a few slices of bread and use a serrated knife to cut the crust off all the sides of the bread.



Use a rolling pin to gently flatten the bread.  You want it slightly flattened so it is easy to roll up the sandwich.



Spread some of the cheese/butter mixture on the bread and lay out an asparagus piece.  Roll until it forms a cigar shape.   You can also cut in the middle and make two little rolls if you are serving them as hors d'oeuvres.
