Pink Grapefruit Margarita

It's almost Cinco de Mayo (The 5th of May) and it's time to get a fiesta started with these cheerful pink grapefruit margaritas!  Ole'!

I had a box of ruby red grapefruits that I got after donating to a fundraiser at my nephews school.  They were so ripe and ready to juice that I knew they would make a wonderful addition to any cocktail.   

I decided to juice them a day early and make some grapefruit ice cubes so I didn't need to use that much ice to make my margarita.  Less ice means less watered down drinks and that's always a good thing. So, plan ahead if you want to make your grapefruit ice cubes before the party. 

These margaritas were perfectly tart and refreshing!  If you want to make a non-alcoholic version, just omit the booze and add lemon-lime soda after you blend the other ingredients together.

Pink Grapefruit Margarita

Ingredients: 
2-3 cups fresh ruby red grapefruit juice
2-3 cups frozen fresh grapefruit juice
1 cup fresh lime juice
1 cup tequila*
2/3 cup orange liqueur (triple sec or Cointreau)*
1 cup ice cubes 
salt to rim glasses** don't skip this step
fresh lime wedges 

Note:  You can adjust your tequila and orange liqueur to your taste by using less or more.

Directions:
1. Juice grapefruits and place in an ice cube tray to freeze overnight.  Place remaining juice in fridge.

2.  Take a wedge of lime and rub on the edge of  the glasses.  Place salt in a small dish and dip edges of glass into salt to make a light coating. Allow to sit and dry while you blend the margarita.  

3.  In blender place frozen grapefruit cubes, ice cubes, lime juice, grapefruit juice, orange liqueur, and tequila in blender.  Blend until smooth or slushy. Pour into salted glasses and serve immediately.  Enjoy.
