Tomorrow is Cinco de Mayo (The 5th of May).  It's a Mexican-American holiday to celebrate the Mexican victory over the French during the Battle of Pueblo in May 1862.  So today I pay tribute to Cinco de Mayo by sharing some of the dishes that you can make to celebrate the day.

Here is my round up of dishes:

Tex-Mex 5 Layer Dip - Happy Cinco de Mayo

Lettuce Tacos (Low-Carb)

Taco Pasta Bake

Black Beans and Brown Rice

Chicken Tortilla Soup

Taco Cups

Mexican Meatball Soup (Albondigas)

Mexican Meatball Soup (Albondigas) Low Carb Version

Taco Pizza

Chicken and Black Bean Enchiladas

 Spicy Slow Cooker Chicken Tacos
