Beef Lo Mein

Beef Lo Mein is a quick and easy Chinese "Take Out" dish that you can make at home.  This Lo Mein is loaded with pasta, cabbage, onions, peppers and some jalapenos to spice things up. 


I love making my own Chinese "take out" at home.  I can have this Beef Lo Mein cooked and on the table in less than 30 minutes for sure.  That is definitely faster than calling in an order to my local Chinese restaurant and waiting for them to deliver it. 

The best part of making my homemade take out is I know exactly what went into the dish and I can save so much money!  I can serve this big pan of noodles to my family of four (with leftovers) for less than $10.  If we ordered from a restaurant one portion would cost that much and we would have to order four dishes plus make sure we had enough money for tax and tipping the driver.  I'm cheap... my kids just tip me with lots of hugs. :)   

If you love Asian style noodle dishes like lo mein, then you can make this dish any time as long as you stock your pantry well.  I always have loads of boxes of dried noodles and bottles of my favorite Asian sauces so I can cook right out of my pantry. I also never run out of fresh ginger because I freeze it and just grate it as needed in all my Asian dishes.  You don't even have to use special Asian noodles for this dish, I just used a box of regular linguine pasta.  This dish is just as good if you omit the meat completely.  

So make your own take out at home, once you realize how quick, easy and budget friendly it really is, you will never pick up that phone again.  


Beef Lo Mein
Recipe by Ramona from Kitchen Simmer

Ingredients:
16 oz box of noodle style pasta (I used linguine)
1lb beef sliced into thin strips
2 Tbs grated fresh ginger
2-3 cloves garlic finely grated or minced
3-4 cups sliced white cabbage
2 bunches of green scallions
1 cup of sliced sweet peppers or bell pepper
1-2 jalapenos sliced
1 large white onion sliced 
2 tsp toasted sesame oil

Sauce:
1/4 cup soy sauce
2 Tbs oyster sauce
1 Tbs Hoisin sauce
1-2 Tbs sambal oelek

Directions:

Step 1:  Cook pasta in salted water until 90% cooked through. Drain. 

Step 2: Heat 2 tbs canola oil in large wok style pan.  Add beef and brown.  Season with some salt and black pepper.  Then add ginger and garlic and cook for another 30-45 seconds.

Step 3:  Add sliced onion, cabbage and jalapenos.  Cook for 3-4 minutes with beef.  Next add the chopped scallions (leave some green tops for garnish) and peppers.  Cook for another 2-3 minutes.

Step 4:  Add sauce ingredients and cook for 3-4 minutes with beef and veggies.  Add cooked pasta and toss well.  Finally add sesame oil and toss well.  Serve hot and garnish with some of the green scallions tops.  Enjoy.
