Slow Cooker Beef and Vegetable Stir Fry

 Celebrate Chinese New Year with Slow Cooker Beef and Vegetable Stir Fry.  It is an easy way to get your Chinese "take out" at home.  



Tender pieces of beef and lots of vegetables are slow cooked with Asian flavors and served over hot rice.... now that's how to do Chinese Take Out at home without heating up your kitchen. 

Happy Chinese New Year!!  2016 is the year of the Monkey and we are having a lot of fun celebrating at our house.  My family loves Asian food, especially Chinese food.   I probably cook at least one stir fry a week at my house.  I love it because it's a one pot dish that can be loaded with lots of vegetables. It's a great way to get all those servings of vegetable we all strive to get every day.

The beef gets so incredibly tender and full of all those great Asian flavors.  I added all the vegetables that I had in my fridge and a can of water chestnuts to really give that extra crunch to the dish.  I highly recommend browning the beef as the first step before placing it in the slow cooker.  The few extra minutes this takes really does give a lot more flavor to the dish.  

Serve this over a bed of rice and you have a meal that is easy to get prepared and can cook while you are enjoying yourself.    



Slow Cooker Beef and Vegetable Stir Fry

Ingredients:
2 1/2lbs of beef cut into strips or slices
1/3 cup soy sauce
1/4 cup Chinese rice wine (Shaohsing Wine)  **not rice vinegar
2-3 Tbs brown sugar
2-3 Tbs Oyster Sauce
3 Tbs grated fresh ginger
2-4 cloves garlic finely minced or grated
2 Tbs Sambal Oelek  (ground chili paste) **or to taste
1/2 cup water mixed with 2 Tbs cornstarch
Bell Pepper sliced (an color or a mix)
Sliced canned water chestnuts drained
Sliced celery
Chopped onion
Carrots -matchstick or chopped
 

Directions:
Step 1:  Lightly season beef with salt and black pepper. Brown beef well in batches and place in slow cooker.  
 
Step 2:  Place all stir fry ingredients in slow cooker.  Set on high for 3-4 hours.  Serve hot with rice.  Enjoy.
