A few weeks back I admitted that I have never been able to successfully bake cookies. Then I discovered a cookbook that gave me a fabulous cookie recipe using cake mix. I baked my first batch of chewy cookies and now I'm hooked on finding more cookie recipes. Today I'm featuring my newest find, these peanut butter blossom cookies, using a cake mix. I have always liked these cookies because they look so festive. Maybe because the cookie bakers I know always make them around Christmas time. This year I can join them because I conquered yet another "cookie mountain". I had so much fun making these little cuties and my daughter thought it was magic how I was able to get a Hershey kiss to sit inside the cookie. Actually, I thought it was pretty magical too.

1 box yellow cake mix
1/3 cup water
1 egg
1 cup creamy peanut butter
24 Hershey Kisses

Then roll into walnut size balls and place on a lightly greased cookie sheet.
Bake in a 350 degree oven for 10-12 minutes.
Once out of the oven, top each cookie with a Hershey Kiss. Allow the cookies to remain on the hot cookie sheet for another few minutes before removing them to a cooling rack. I actually allowed them to cool on the cookie sheet.

Makes 2 dozen cookies. Enjoy.
