Tandoori Pork Roast

Yum

The flavors of Tandoori is not only for chicken....try it with pork.  This was such a quick meal to put together.  I marinated the pork for about 4-5 hours and then baked it for 30 minutes.  What a flavorful, succulent roast dinner with no real effort on my part.  Now that was a perfect way to spend my Sunday in the kitchen... or not spend it.

Ingredients:
2 pound pork loin (lean)
1/2 cup yogurt ( I used Greek style because that's what I had)
1 Tbs Paprika
1 tsp ground cumin
1/2 tsp turmeric
1 Tbs Garam Masala
Salt and Pepper
juice of half a lime
1-2 Tbs of my Ginger/Garlic Paste or 2 cloves of garlic and 1 inch of ginger grated

Directions:
Slather the marinade/paste all around the pork loin and allow to marinate in the fridge for 4 hours to overnight.  

Take out of the fridge and allow sit on the counter for 20-30 minutes and then put on a baking sheet(cover it with foil for easy clean up) and bake it in a 375 oven for 30-35 minutes until cooked through. 

 Allow it to sit/rest on the baking sheet for at least 10 minutes before slicing.  Then slice and serve.  Enjoy!  Serve with fragrant rice and vegetables.

  4. I do love tandoori. I'm so glad you posted this because I've been looking for a pork recipe to try. Best thing is is that I have all the ingredients already. Are you using Jasmine rice in the recipe? Thanks!

  9. Ahhhh Ramona! Pork is one of my favorite comfort foods! I am always amazed at what you pull together. I bet the 5 hour marinade had it flavorful and juicy! You are such a whiz in the kitchen! But I think I can manage this one! Great recipe! (And congrats on your nomination!)
