Sweet Potato Pie Recipe for Electrolux Comfort Foods Program

So here is my selection for my a wonderful comfort food, PIESweet Potato Pie to be exact. I am not a pie baker, nor am I a fan of these traditional Thanksgiving pies. So I was skeptical when my husband asked my mother-in-law for her recipe.  But this pie truly made me a sweet potato pie convert.  I really loved it.  The pie was sweet, without being overly sweet.  It had a nice cinnamon flavor without being overly full of spiced flavors like some pies.   Best of all it was creamy, delicious and easy to make.  So take this from a formally new to pie baking girl, you won't be disappointed making this pie for your Thanksgiving holidays or any day of the year.   

Ingredients (for two 9 inch pies):
3lbs of sweet potatoes
4 large eggs
1/3 cup butter
3/4 cup sugar ( I actually used Splenda a sugar substitute)
1 tsp vanilla
1 tsp cinnamon
1 cup milk
2 frozen store bought pie crusts
Directions:
Peel the sweet potatoes then boil them until they are tender.   Once cooled, smash the sweet potatoes well.  In a separate bowl add the eggs, butter, sugar, vanilla,  cinnamon and milk
Add the sweet potatoes and beat with the mixer again until the filling is smooth.

Note
: some of the fibers from the sweet potato will get stuck on the beater, discard the fibers and don't add back into the filling. 
Then fill your frozen pie shell or a homemade pie crust with the sweet potato filling  and dust with a little more cinnamon.




 Bake at 350 degrees for one hour. After one hour test with a knife to make sure it comes out clean. Let pie cool.

Serve with whip cream. Enjoy!
