Crockpot Paprika Chicken

I am totally embracing my crockpot/slow cooker during these hot days of summer. I am also loving the set it and pretty much forget it convenience of this style of cooking.  I set this dish at 8am yesterday on low for 9 hours of cook time while I went out with the kids for a play date with their cousins.  I got back 7 hours later and had actually forgotten I was cooking dinner in the crockpot until I came into the house and was greeted by the insanely good smell of this Paprika Chicken cooking.  I finished it off with some sour cream and then cooked up some store-bought  cheese tortellini to complete the meal.  My family was doing the happy dance at dinner and I was doing the happy dance because it was so wonderfully simple.

3lb of skinless chicken (any parts)  I used frozen boneless chicken breast
2 cups chicken stock (or water and bullion equivalent)
1 jar (48oz) tomato pasta sauce
1 tsp dried oregano
1 tsp dried basil
1 Tbs dried parsley flakes
1 Tbs onion powder
1 Tbs brown sugar
1/4 cup soy sauce (or to taste)
2 Tbs paprika
red chili flakes to taste
1 bell pepper diced
1lb of mushrooms sliced
1 large onion chopped
1 bay leaves
1/3 cup of sour cream
1/3 flour (if needed)
seasoning salt and black pepper as needed
garnish with torn fresh basil (optional)

Note:  If you do not want to serve this over rice or pasta, you can decrease the stock and pasta sauce by half each.

Place all ingredients into large crockpot/slow cooker (except for sour cream).  Place on high for 4-5 hours or low for 8-9 hours.  Stir occasionally and adjust seasoning.  Add sour cream in the last hour of cooking.  Serve over pasta or rice. Enjoy.

  1. This looks like a great dish for me to put my garden produce to good use! Yum! I love slow cooker recipes!

  2. Me too! I have been using my slow cooker everday! Gosh, your dish looks gorgeous! I can almost taste it!

  3. A very interesting fusion recipe! When I first read the 'paprika chicken' title I believed us off to the classic Hungarian version of the dish - the oregano and basil made a slightly different turn, and then the soy sauce came to visit too :) ! Having for few years been married to a Hungarian cookery book author, where about 5-6 different kinds of paprika decorated our kitchen shelves, this is fun!! Except I do love this beautiful dish with one of the many kinds of dumplings or, even more, with galushki :)

  4. This is so pretty and the tortellini is a yummy idea.

  5. You put the chicken in the crock-pot from frozen? I love the sound of this recipe.

6.'ve made me hungry. To be shown a dish that looks so, so good and doesn't heat up the kitchen or make me even be in it sounds perfect right now. I also love walking inside to the aroma of food cooking. It's not something that the cooks get to do all that often, is it. :)

  7. Now I'm tempted to invest in a crockpot Ramona. What amazing colours and I'm sure it tasted divine.

  8. This is a tasty looking dish Ramona. The sauce goese nicely with the tortellini, too. Congrats on the Top 9 my dear. Hope you are having a lovely weekend.

  9. You know - with this heat a crockpot is a GREAT idea! If we weren't fixing to undergo a full kitchen remodel, I might buy one this year! But I think the hubby would kill me if I brought anything else into the kitchen! :) I love a good chicken paprika and this recipe looks delicious! Crazy idea serving it over tortellini, but it looks like a marriage made in heaven! Hope you're having a marvelous weekend Ramona!

  10. Oh, this is a perfect dinner for this heat wave! There are only so many days in a row I can eat grilled food...and your paprika chicken looks delish!

  11. I love that you are showcasing these crockpot meals for Summer! It is really an ideal time, but reserved for cooler months it seems...perfect!
Hope you are having a lovely weekend and enjoying the season :)

  12. I tend to put my crockpot away for the summer but you are so right. No oven but hot meal. Yes, I will have to bring it back out. Great serving it with the pasta. This sounds fabulous.

  13. Sounds fantastic! While packing during our recent move, I found a tin of smoked paprika that I forgot about, this is the perfect recipe to put it to good use!
