Blueberry-Pineapple Crumble

I made this as a last minute dessert for my parents homecoming from a month long vacation. I was in such a rush that I almost said we'll just have ice cream for dessert, but I couldn't do that.  I was so happy that this dessert came together quickly and only required a few ingredients.  You can use any fruits you like in your crumble.  I like the combination of the sweet blueberries against the tartness of the pineapple.  Cherry or Apple pie filling are good substitutes as well.  The crumble topping is light and crunchy giving a nice texture against the other ingredients. Served with Vanilla ice cream and you have a lovely light dessert.

To start mix together your fruit.  I used:
  • 1 20oz can of diced pineapple with juice
  • 1 pint of fresh blueberries
  • 1/4 cup of sugar
  • 2 Tbs of cornstarch
Mix all the ingredients well and put in a butter 9x13 baking dish.

For the crumble mix together:
  • 1 cup all purpose flour
  • 1 cup of quick cooking oats like Quaker Oats
  • 1 pinch of salt
  • a sprinkle of powdered cinnamon
  • 1/2 cup of brown sugar (packed tightly in the measuring cup)
  • 2-3 Tbs of butter or margarine.  It's better to use cold butter, but my butter had gotten softened and it still worked 
Mix all the ingredients together with your fingers. You want it to form a coarse crumble like the example below.


Sprinkle the crumble mixture over the fruit in the baking dish.  Bake in a 400 degree oven for 30 minutes.  The topping should be browned and the fruit bubbly.

Serve hot out of the oven with Vanilla ice cream.

 Serves 4-6 people.  Enjoy!
