"Healthy" Blueberry Muffins with Cinnamon Crumble and Lime Glaze

I can't resist a sale.  My local grocery store had buy one blueberry pint and get 2 free.  Who would say not to that?  So now I've got 3 pints of blueberries looking at me for me to do something with them.  First things first,  my daughter and I ate one pint just outright.  Okay, now I have 2 pints to use up.  So, I decided to make blueberry muffins.  But not just your typical muffins, I wanted something to make these muffins stand out.  So I added a cinnamon crumble and a lime glaze.  Okay... ask me how many of these muffins I've eat already....

Dry Ingredients: 
1 cup all purpose flour
1/2 whole wheat flour
1/2 cup of rolled oats
2 tsp baking powder
1 tsp cinnamon powder
3/4 cups sugar or splenda
pinch salt

Wet Ingredients:
1/2 cup applesauce
1/2 cup buttermilk
1 egg

Crumble:
3 Tbs oats
1-2 Tbs of cold butter
3 Tbs of all purpose flour
1- 1 1/2  tsp of cinnamon powder
1 Tbs of sugar

Glaze: 
1/3 cup of powdered sugar
Juice of half a lime



Directions: 
Mix muffin wet and dry ingredients together with a mixing spoon.  Put into cupcake liners.  Mix crumble ingredients and place on top of unbaked muffins. Gently press down so crumble stays on top of muffins.   Bake at 400 degrees for 20-25 minutes.  Mix glaze and drizzle over muffins.

Tips:  To evenly and easily fill muffins pans use a ice cream scoop

I suggest you use foil cupcake liners because they don't stick to the baked muffins from my experience or use no liners and just grease your muffins pans.  The paper liners stick

I pour the glaze into a small ziploc bag and snipped a little bit off the tip so I could drizzle the glaze on the muffins.


Makes 12 muffins.  Enjoy.
