Chocolate and Strawberry Stuffed French Toast

We are less than 1 week away from Valentine's Day so I had to share some ideas to make the day extra sweet.  I saw this wonderful and decadent Chocolate and Strawberry Stuffed French Toast on Healthy Appetite with Ellie Krieger and I was in my kitchen 10 minutes later making it.  The funny thing was I had just finished making some chocolate covered strawberries so I already have the strawberries and melted chocolate sitting in my kitchen.  I think the next time I will make one change from the originally recipe and swap the ricotta cheese for some cream cheese and see how that tastes.  My son absolutely adored this trial run recipe for Valentine's Day.  He has already put his order in for the 14th.




 Ingredients:
 To make 3 Stuffed French Toast:
2 eggs with 1/4 cup of milk beaten until  frothy
1/3 cup of ricotta cheese
melted chocolate or chocolate chips
sliced bread (with crust cut off-optional)
1lb of sliced fresh strawberries
powdered sugar for garnish

 Notes:  I think you can also substitute cream cheese for the ricotta cheese and it would be wonderful.

Directions:
Apply chocolate, ricotta cheese on sliced bread.  Add strawberries and make into a sandwich.  Then dip into egg custard and soak both sides.
Butter a griddle or frying pan on medium-low heat and allow both sides of the bread to become golden brown. You want to do this on low heat so you give the egg time to cook.  Dust with powdered sugar and sliced strawberries and enjoy.
