When I was a child, my mother never had trouble getting me to eat my veggies. We ate a lot of rice and curry while I was growing up so my mother curried vegetables and it was like magic. The flavors of curry, cumin, turmeric can make even the most "controversial" vegetable delicious. Now, I'm trying to do this with my kids in the hopes of making them veggie lovers like I am. Today, I decided to take swiss chard and give it a curry makeover. So pick a vegetable you are not crazy about and give it a curry makeover. You may see that vegetable in a whole new way...
Ingredients:
1lb Swiss Chard (including tender part of stems) chopped
1 medium onion chopped
2 green chilies chopped
10-15 fresh curry leaves
2-3 sweet peppers (optional)
1 Tbs of grated fresh ginger
1 Tbs of grated fresh garlic
1 cinnamon stick
1 tsp of mustard seeds

1 tsp of cumin seeds
1tsp of garam masala
1/2 tsp of turmeric
1 tsp of red chili flakes or to taste
1 cup of coconut milk
1/4 cup of water
1 Tbs of canola oil
Directions:


Heat 1Tbs of canola oil in a large pan on medium-high heat. Add curry leaves, cinnamon stick, mustard and cumin seeds. Fry for 30 seconds until fragrant.
Next add your onion, chilies, ginger and garlic. Fry to 2-3 minutes.

Then add your spices (turmeric, chili flakes and garam masala). Stir for 30 seconds. Add the swiss chard, water and coconut milk. Cook down until you have the desired texture you like for the chard. Taste for seasoning and serve with rice. Enjoy.

I avoided curry for most of my life and suddenly found myself liking it after I had my son last year. I've never tried swiss chard, but I do believe this recipe will be making an appearance in my kitchen in the upcoming weeks! I'll let you know how it goes :D

ReplyDeleteA recipe for swiss chard that includes the stems! Love it! Most of the time the stems end up in the compost which I always fill guilty about. With Rainbow and Red chard the stems are so tender I would probably throw them all in followed by all those awesome seasonings!
