Buffalo Chicken and Kale Taquitos

 Are you looking for some easy dishes to make the Super Bowl?  I made these perfectly snackable Buffalo Chicken Taquitos that will be a hit at any party. I even made them healthier by adding a lot of vegetables (including my beloved Kale) so the kids would not know they were eating something good for them too.   I used some of my favorite Good Cook cookware and bakeware to help me along the way.  If you like this idea for the Super Bowl, check out my blog next week because I'm doing a whole week of Super Bowl dishes to enjoy and some of them may even surprise you.

Ingredients:
1-2 packets of flour tortillas (8 inch)

Buffalo Chicken Mixture:
4 large chicken breast (poached)  See notes below*
1 large onion
1/2 green bell pepper
1 stalk celery
1 large carrot
2 handfuls finely shredded kale (no thick stem)
1/3 up to 1/2 cup of hot sauce (I used Frank's)
1-2 tsp grated garlic
red chili flakes to taste
salt and black pepper to taste
1 (8oz) brick cream cheese (regular or low fat)
2 cups shredded cheese (I recommend Mexican Blend)

Garnishes:  Sour Cream for dipping (optional)

Note:  To poach chicken breast, just place chicken in pan covered by water. Simmer on medium until chicken is fully cooked. Remove chicken and shred.

Directions:
Poach chicken and then put in the food processor to shred.  Set chicken aside until later.  In the same food processor chop carrot, onion, bell pepper and celery into fine dice.  Heat large wok/skillet with 1 Tbs of canola oil and saute vegetables for several minutes and season with salt and black pepper.

Next chop kale into fine shred (in food processor).  Add kale, garlic and chili flakes. Saute 2-3 minutes.  Then turn stove off and add the brick of cream cheese and stir well.  The heat from the vegetables will soften the cream cheese.

Next add the shredded chicken and hot sauce.  Mix well and taste for salt and seasoning*(see note)*.  Once the chicken mixture has cooled down a bit, add the shredded cheese and mix well.
**Note: Be conservative with the salt when seasoning, remember the cheese will have salt flavor.
Warm flour tortillas so they are pliable.  I did this by placing them in a lightly damp towel in the microwave. Add a line of filling and roll like a cigar. Place seam side down on a well oiled baking pan.  Once all taquitos are made take more oil and brush using a pastry brush. 



Bake in a 400 degree oven for 20 minutes or until golden brown. If filling comes out from the ends, just gently cut it off the end before serving.  Serve warm.  Enjoy.
