Sausage, Pepper and Onion Meatloaf

I have been on a major sausage, pepper and onion kick the last few weeks.  It started with my Sausage, Pepper and Onion Pasta and now it's morphed into this meatloaf.  We ate this for dinner with mashed potatoes and broccoli and then the next day in spectacular meatloaf sandwiches that tasted like a sausage and pepper sandwich.  I am glad I get to finally use up my poultry seasoning (that I only use around Thanksgiving time) and fennel seeds. My version of "sausage" is really a combination of lean chicken and pork. It's tastes like the hot Italian sausage I used to buy in links, but with no grease.  I am really enjoying getting the flavor of hot Italian sausage, but custom made for my taste and lean so I can feel less guilty eating a nice thick slice.

 Ingredients:
2 onions sliced
2-3 bell peppers or sweet peppers sliced
1 tsp dried basil
1 tsp dried oregano
Salt and black pepper

Meatloaf ingredients:
1lb ground chicken
1lb ground pork
1Tbs grated garlic
2 tsp fennel seed
2 tsp seasoning salt (or to taste)
2 tsp oregano
2 tsp poultry seasoning
2 tsp paprika                                                                                                 Sauce:
2eggs                                                                                                  2-3 Tbs Ketchup
red chili flakes to taste                                                                          1 Tbs sriracha
black pepper to taste
4-5 slices of bread mixed with 1/4 of milk and crumbled


 Directions:
Mix all meatloaf ingredients and form a loaf on a baking sheet.
Tip: line baking sheet with foil for easy clean up.


Bake in a 375 oven for 20 minutes then apply sauce over the top of meatloaf and bake for another 20-25 minutes until loaf is cooked through.

In a pan saute the onions, peppers, salt, pepper, dried basil and oregano.

Serve meatloaf with peppers and onions.  You can accompany it with mash potatoes or any of your favorite meatloaf sides.  You can also make it into meatloaf sandwiches.  Enjoy.
