Chicken Salad with Mango Chutney

I recently found spinach tortillas wraps and they reminded me of a chicken salad wrap I had at the deli of my old office. So I had to make my own version of this chicken salad wrap, but I wanted to jazz it up.  I looked in my fridge to see what condiment I could add and there it was my Mango Chutney.  I have been enjoying the mango chutney with my rice and curry meals, but I could certainly spare some for this chicken salad. I poached my own chicken, but you can definitely make quick work of this by buying a rotisserie chicken.   If you don't have mango chutney available you can also buy a good quality chutney from the store and substitute it for my recipe.  I really enjoyed the sweet and savory flavor the chutney gave my chicken salad.   If you haven't tried mango chutney as a condiment for sandwiches, it's a must try.

 
Ingredients:
3 cups of shredded chicken (poached or rotisseire)
1/4 cup of mayonnaise (or more as needed)
1 Tbs of dijon mustard
2-3 Tbs of minced red onion
1-2 Tbs of minced serrano or green chili seeded
1-2 Tbs of minced mild red pepper seeded
2-3 Tbs of minced celery
2 Tbs of  Mango Chutney
Salt and Black Pepper to taste
Garnish:  lettuce and cucumber (optional)


Directions:
Mix all ingredients together and taste for seasoning.   Spread on a sandwich or in a wrap.  Enjoy.
