1 (15oz) can of chickpeas (rinsed and drained well)
1 tomato diced
1/2 English cucumber (or regular cucumber seeded) diced
1/2 red onion finely diced
1/2 cup Feta cheese
1/2 Tbs minced fresh mint
1 Tbs minced fresh parsley

1/2 lemon juiced
1 Tbs canola oil
salt and black pepper to taste
1 tsp rice wine vinegar
1/4 tsp cumin powder
Directions:
Place all prepped ingredients in bowl. Prepare dressing. Mix all ingredients together with dressing and chill for 1 hour. Enjoy.

ReplyDeleteMy husband simply will not try chickpeas. It is so frustrating. Lucky for me I have a potluck at work coming up. This will be my dish. Looks light and refreshing.
ReplyDeleteOh, that salad looks so amazing. Perfect for summer! And I love those veggie keepers. I'm constantly having to throw away halves of tomatoes because they get mushed or pushed to the back of the fridge where they turn into liquid in a ziploc...pretty gross.
