Crab Curry- Sri Lankan

When you come from a country that is a tropical island like Sri Lanka the seafood is beautiful, extremely fresh and very much loved.  Something like Crab Curry is a big crowd pleaser.  Now it’s not an everyday curry, but if you want to gather your friends and family to sit at the table for a long time and have a good curry meal… you can’t beat a spicy crab curry.  My mother came over to teach me her recipe for this spicy crab dish. My mother and I agree, the gravy of the crab curry is our favorite part of this dish.    We served it with a very simple curry meal of rice, lentils and some Kale Mellun.  So if you decide to make this crab curry, remember to bring a big appetite and a little patience to crack all that crab.  Then all you have to do is feast!
 



Crab Curry

Serves:  (4-6)
Ingredients
  • 2-3lbs of crab (about 3-4 large crabs or legs- I used snow crabs)
  • 1 medium onion chopped
  • 1-2 green chilies sliced (serrano, jalapeno etc..)
  • 12-20 curry leaves
  • 2-3 pandan leaves
  • 1 stalk lemongrass cleaned
  • 1Tbs finely minced or grated garlic
  • 1Tbs finely minced or grated ginger
  • 2 tsp fenugreek seeds
  • 1 inch stick of cinnamon
  • Juice of one lemon
  • 1-2Tbs red chili powder (or more to taste)
  • 1 tsp turmeric powder
  • Salt to taste
  • 3-4 for cups of water or as needed
  • 1 cup coconut milk
Instructions
1. First rinse crab well to wash off any sand and grit.
2. Then into a large pot add onion, chilies, curry leaves, pandan leaves, lemongrass stalk, garlic, ginger, fenugreek seeds, cinnamon stick, lemon juice, red chili powder, salt, and turmeric powder.
3. Add the cleaned crab pieces and about 3-4 cups water or just enough to slightly cover the crab so it can boil. Simmer on medium for 20-25 minutes.
4. Add one cup of coconut milk Simmer for another minute. Taste for salt and seasoning. Adjust as needed. Serve hot with rice. Enjoy.

Step by Step Directions:
