Figuring out what to eat for breakfast is one of my biggest mealtime obstacles. I'm trying to eat low- carb so eating toast, cereal and pancakes are not exactly high on the list and certainly not low-carb friendly.
I have eaten loads of omelets recently, but I'm getting tired of them and seriously wanted to switch things up. My husband loves a good breakfast hash, but hashes usually have some type of potatoes. I decided to go for a completely low-carb version of hash and substitute zucchini, squash and peppers for the potatoes. It worked out great and even my husband had to admit he loved it and didn't miss the potatoes. We actually ate this for lunch so it's a meal that is good any time of day.
My favorite part was all the beautiful colors on my plate... starting your day with this much color is definitely a good thing. I love a good fried egg too, so it was nice to have an egg over easy on top of the hash. I know it's still an egg.... but it's not an omelet.
PS... If you see a bagel in the photos... that's my husbands. :)
1lb cubed ham
1 zucchini dice
1 yellow squash diced
sweet pepper or 1 bell pepper cut into a dice
1 medium onion chopped
1/4 tsp dried thymeblack pepper and salt to taste
1/4 tsp turmeric powder
red chili flakes to taste
1/4 tsp granulated garlic powder
Serve with fried egg
Note: (I got a 1/2 inch thick slice from the deli and cubed it myself)

What a lovely, delicious looking breakfast! That is such an inventive use for squash. I'd happily eat this meal for breakfast, lunch or dinner. YUM!
