The Dry Ingredients:
2 cups whole wheat flour
1/2 cup of all purpose flour
1 Tbs cinnamon powder
1 Tbs baking powder
1 pinch of salt
Mix ingredients well.
The Wet Ingredients:
2 cups cored, peeled and diced apple (any firm apple will do)
1/4 cup applesauce
2 eggs
1/2 cup firmly packed brown sugar
1 1/2 cups of buttermilk
Mix ingredients well.
Slowly mix the dry ingredients into the wet ingredients. Do not over mix.
Butter or Spray a baking pan or bundt pan. Pour batter into pan and Bake at 350 degrees for 35-45 minutes or until cake is set (when a butter knife comes out clean close to the center).
Take cake out of baking pan and make a glaze. The glaze is 1 cup powdered sugar and the juice of one fresh lemon. Mix well and pour over the cake to glaze. If you like you can poke wholes around the top of the cake to allow the glaze to seep into the cake.

ReplyDeleteI'll take a piece! This is a fantastic recipe. I love the idea of the lemon glaze on an apple cake. Ok, I love any idea with lemon in it, but that's beside the fact. Thanks for sharing this!

ReplyDeleteThanks everyone for the feedback. The cake was pretty good for a last minute "throw it together and bake" cake. I especially loved the tart and sweet icing with lemon. We were scrapping the icing off the cake plate and trying to get ever last bit. : ) The cake is very basic and adding raisins or walnuts would be a great addition.
