Banana Cake with Chocolate Chips and Coconut

Sometimes I wonder why I even bother buying bananas. My kids and husband want them, but they seem to forget about them until they are too ripe to enjoy.  I think it's their master plan actually (insert evil laugh here).  They know I won't let the bananas go to waste and will make a smoothie or a baked good with it.  So I fell right into their plans and baked a banana cake.  But I wanted more than just bananas in this cake. I wanted chocolate and coconut- two of my favorite flavor combinations.   This came together in less than 10 minutes (even for a baking novice as myself) and one hour later I was feasting on some delicious and decadent cake.

Ingredients:
Dry Ingredients: 
1 1/2 cups of all purpose flour
1 1/2 cups of whole wheat flour
2 1/2 tsp of baking powder
1/2 tsp of baking soda
1/4 tsp of salt







Wet Ingredients: 
4 (medium) ripe bananas mashed
1 cup of applesauce
1/4 cup of half and half (or milk)
1 1/2 cups of sugar (or splenda)
4 large eggs
1 tsp of vanilla
Garnishes:
12oz bag of semi sweet chocolate chips
1 cup of bakers coconut flakes






Directions: 
Sift all dry ingredients together and set aside.  Mix all wet ingredients together with an electric mixer until  creamed.  Slowly fold in the dry ingredients into the wet ingredients.  Do not over mix.  Fold in the chocolate chips and coconut flakes.  Pour batter into a well greased bundt or cake pan. Bake in a preheated 350 degree oven for 55-60 minutes or until done.
Allow to cool and invert onto a cake platter.  Serve as is or garnish with some powdered sugar.  Enjoy.

  1. This is wonderful! I understand why they let the bananas over-ripen! I love that there is whole wheat flour, applesauce AND chocolate chips in this! YUMMY!
