Greek Pasta Salad

We have had the oddest weather this spring.  We had a very spring like winter and then when April hit it got cooler and chilly.  We had to pull out our winter coats and turn the heat back on.  I was ready for some warm weather and it came yesterday with a beautiful 80 degree day.  I was in the mood for a light pasta salad and this one fit the bill.  I ate it as a light lunch then I served it with grilled chicken at dinner time. I don't usually eat the same dish twice in one day, but when it's cool, refreshing and tasty...why not. 

 Ingredients:
4-5 cups of cooked orzo style pasta (cook in well salted water to season)
2-3 cups of seeded and peeled English cucumber diced (use a spoon to seed the cucumber)
2 cups of Greek olives (use pitted olives)
1/2 green bell pepper diced fine
1/2 medium red onion diced fine
1-2 mild red chilies (fresnos) diced fine
1/4 cup fresh parsley minced
8oz of feta cheese crumbled


 Creamy Greek Style Dressing
1/4 cup Extra Virgin Olive Oil
1/4 cup  Fresh lemon juice
1-2 cloves of grated garlic
1 Tbs of honey
2 Tbs of mayonnaise
1-2 tsp of red wine vinegar
salt and black pepper to taste

 Directions:  Prepare all ingredients and mix dressing.  Allow pasta to cool and mix with all ingredients. Serve at room temperature or chilled. Enjoy.

  1. I've always loved light pastas salads. Now that the weather is warm this is my idea of a perfect dinner. Looks so yummy!

  2. I love Greek salad! And the weather has been weird here, too. Last Saturday we had SNOW for crying out loud, today it's supposed to be almost 90.

  3. Our weather has been all over the map this year as well! I kind of gave up and started eating warm weather food anyway because in my heart I wanted it to be warm out.

    1. You can substitute red bell pepper or leave it out all together. I really added it for some additional color to the dish. Hope you enjoy. :)

  21. I love how easy this is and that you made your own greek dressing. This would be perfect for a summer pot luck! I buy olives because my husband likes them, but I never know how else to use them. I'm totally going to bring this to the next party we go to!

    1. It's a great salad for a bbq... but I suggest you leave out the mayo in the dressing since it will be sitting out. It's only a small amount, but you don't want it to go bad on you.
